Vegan Double Chocolate Protein Doughnuts
These vegan double chocolate protein doughnuts are soft, sweet, full of dark chocolate flavor and plant-based protein! Made with 6 ingredients, gluten free, and naturally sweet. Happy Monday, beautiful friends! I made you healthy doughnuts, with a generous dose of chocolate, because Monday (every day?)...
Ingredients
2 cups rolled oats, blended to flour consistency
2 scoops vegan chocolate protein powder – I love the Vivo Life or Garden of Life brands
2 tbsp cocoa powder
1 flax egg 1 tbsp ground flaxseed in a bowl with 3 tbsp water, set in the fridge at least 20 minutes
1 cup unsweetened applesauce
1/2 cup nondairy milk – I use unsweetened almond milk
Instructions
Preheat the oven to 350 degrees.
In a large bowl, mix the oat flour, protein powder, and cocoa powder.
Add the flax egg, applesauce, and nondairy milk, and stir into a thick batter.
Portion the batter into a parchment lined or lightly sprayed doughnut pan. I start with about 1/4 cup of the batter for each, then evenly distribute the remaining batter among the doughnuts. It’s okay if it goes above the edges on the pan, I just carefully place the batter and spread with clean fingers as necessary!
Bake the doughnuts for 15 minutes, then let them cool for 10 minutes before turning out.
